Clementine vinaigrette is a super flavorful and light salad dressing that captures the sweet yumminess of clementines beautifully. Perfect for summer salads or as a marinade for chicken or fish.
Ingredients:
- 2 clementines, zest and juice about 1/4-1/3 cup
- 1 Tbsp honey or maple syrup for vegan
- 2 Tbsp apple cider vinegar
- 1/3 cup olive oil
- 1 tsp sunflower seed butter (or other nut butter)
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions:
- Combine all ingredients into a salad dressing cruet or jar with a lid and shake to combine. Serve atop your favorite salad or use as a marinade for chicken or fish.
Notes:
Zesting clementines is a bit tricky since there is relatively little pith between the peel and the fruit. What you do get in terms of zest will be small but MAN does it impact the flavor in a really positive way.
I had two pieces of sorry-looking clementines to use up so when I found your recipe I decided to try it. This vinegraitte has a really lovely, delicate flavour which elevated a simple mackerel salad beautifully. Thanks!
