Ingredients:

  • 1 medium peach pit removed and diced
  • 1/2 cup bell pepper diced
  • 1/2 small jalapeno pepper seeded and diced
  • 1 Tbsp red onion finely chopped
  • 2 tsp lime juice
  • pinch salt
  • Optional: fresh parsley or basil, crushed red pepper, paprika, chile lime seasoning, etc.

Instructions:

  • Add all ingredients to a small bowl and stir to combine. Transfer to the refrigerator and let chill for 2 hours.
  • Serve with tortilla chips or atop your favorite protein like chicken or seafood.

Notes:

Find yourself with a surplus of jalapeño peppers? I chop and deseed an entire bag at a time and then freeze them in strips to use for later.
