Four Banana Banana Bread

Ingredients:

  • 4 ripe bananas
  • 1/3 cup oil I use avocado
  • 1/2 cup sugar
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • pinch of salt
  • 1 1/2 cups all-purpose flour can use gluten-free flour

Instructions:

  • Preheat the oven to 350°F. Spray loaf pan with cooking spray and dust with flour.
  • In a medium to large mixing bowl, mash bananas with potato masher (or hands, if you’re feeling frisky). Add oil to the mashed bananas and gently stir to combine. Mix in the sugar, egg, and vanilla extract. Sprinkle the baking soda and salt over the mixture and stir to combine. Add the flour last, mixing until just combined.
  • Pour mixture into loaf pan and put into preheated oven. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
  • Remove from oven and cool on a rack. Slice and serve.

Notes:

  1. This recipe can easily be made gluten-free by using your favorite gluten free all-purpose flour blend.
