Seriously sweet and sometimes sanctimonious, this overnight french toast bake is great for entertaining or whenever you feel like a little something extra.

Ingredients:

  • 4-5 cups bread cut into 1-inch cubes
  • 6 large eggs
  • 1 1/2 cups milk plant or cow
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions:

  • Preheat oven to 350°F.
  • Lightly grease a 7×11 or 8×8 glass baking dish and add cubed bread to the baking dish. Set aside.
  • In a medium sized mixing bowl, whisk together eggs, milk, vanilla, and cinnamon until well combined. Pour over the bread and push down with a spoon or your hands until it's mostly covered.
  • Transfer to the oven and bake for 35-45 minutes, or until the french toast bake begins to brown along the edges.
  • Serve immediately with maple syrup, powdered sugar, or a fruit compote.

Notes:

I take the ends of our bread that no one eats, cube them up, and store in a gallon zip-top bag and throw it into the refrigerator. When the bag is full, I know it’s time to whip up another batch of French Toast Bake.
This using up of your leftover bread ends is also why I call it sanctimonious at times, because you are saving something that would otherwise be wasted and that can make you feel morally superior to others. 😉
