Ingredients:

  • 1 Tbsp oil avocado or olive
  • 1 lb. ground bison ground beef, or turkey
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 15 oz can tomato sauce
  • 1 15 oz can petite diced tomatoes
  • 1 cup broth chicken, vegetable, beef, or water
  • 3 cloves garlic minced
  • 2 Tbsp chili powder
  • 1/2 Tbsp ground cumin
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 – 1 tsp cayenne pepper optional

Instructions:

  • Heat oil in a large pot over medium-high heat. Add in onions and bell pepper and saute for 5 minutes, stirring occasionally.
  • Add ground bison and garlic and cook until no longer pink, about 7-10 minutes.
  • Add in tomato sauce, diced tomatoes, broth (or water) and all spices.
  • Bring to a boil, then lower heat to a simmer. Cook for 20-25 minutes.
  • Serve as is, on top of spaghetti noodles, riced cauliflower, or whatever else tickles your fancy!

Notes:

Store in the refrigerator for 3-4 days or freeze for up to 3 months.
