Chicken and Leek Burgers

Ingredients:

  • 1-2 Tbsp olive oil
  • 1/4 cup leeks loosely chopped
  • 1/2 tsp garlic minced (or 1 clove)
  • 1 lb ground chicken
  • 1/2 tsp salt or to taste

Instructions:

  • Heat 1 Tbsp of oil in a large skillet over medium heat. Add in leeks and sauté for 5-7 minutes. Add in minced garlic and sauté for 1-2 minutes more. Transfer to a medium mixing bowl and let cool for a few minutes.
  • Add in ground chicken and mix to combine with your hands. Form into patties (I generally make 4-6 depending on what size I want them).
  • Using the same frying pan as before, add the remaining 1 Tbsp of oil and heat over medium heat. Add patties and cook for 5-7 minutes per side or until chicken is fully cooked (internal temp should be around 165°F).
  • Serve with your favorite sides and enjoy!
