Delicious for breakfast, lunch, or dinner, this sweet potato and beef hash is always a winner in our house. And with a grand total of three ingredients (YEP, THREE) it truly couldn’t get any easier. Unless, of course, it cooked itself.

Sweet Potato and Beef Hash
Delicious for breakfast, lunch, or dinner, this sweet potato and beef hash is always a hit in the House of Lev. And with a grand total of three ingredients (YEP, THREE) it truly couldn't get any easier. Unless, of course, it cooked itself.
Ingredients:
- 1 Tbsp olive oil
- 1 lb ground beef
- 1 large sweet potato peeled and cubed
- salt and pepper to taste
OPTIONAL:
- 1 tsp garlic powder
Instructions:
- Heat olive oil in a large skillet over medium heat. Add in sweet potato and sauté for 5-7 minutes, until potatoes begin to soften and brown.
- Add in ground beef and cook until beef is no longer pink, another 5-7 minutes.
- Season to taste with salt and pepper.
Notes:
- This is a super flexible dish and can be dressed up (or down) with your favorite herbs and spices. Or left as is for a super simple meal. Heck, throw in some bell or jalapeño peppers and make it even more colorful. The point here is, it can be as fancy or as basic as you want/need it to be.
- The sweet potato and beef hash pairs really well with roasted Brussels sprouts and/or broccoli.
